He also gained hands-on experience harvesting at \u003cstrong\u003eDomaine Plaisance \u003c\/strong\u003e(run by the Penavayre family), with whom he has maintained close ties.\u003c\/p\u003e\n\u003cp\u003eIn 2019, he took over 4 hectares of vineyards on a leasehold basis, immediately choosing to farm them \u003cstrong\u003eorganically and biodynamically\u003c\/strong\u003e. Without a winery of his own, he initially sold his grapes on the vine to winemakers and a brewer in Paris.\u003c\/p\u003e\n\u003cp\u003eThis valuable experience inspired him to leave his previous job in 2021 and devote himself entirely to winemaking.
