Grape variety: 100% Chardonnay
Terroir: Typical Kimmeridgian limestone soils of Chablis, rich in marine fossils. Vines are farmed according to organic and biodynamic principles.
Vinification: Fermentation in stainless steel tanks, followed by partial ageing in old oak barrels for several months on fine lees, with minimal bâtonnage. Bottled with little to no filtration, in keeping with the domaine’s pure and precise style.
Tasting notes: Pale gold with silvery highlights. The nose is intense, combining fresh lemon, pear, grapefruit, white flowers, and oyster shell. On the palate, the attack is clean and tense, with beautiful saline depth. The texture is precise, carried by crisp acidity and a long, mineral-driven finish.
🍷 Serving temperature: 10–12°C. Enjoy from 2025 for its freshness, or cellar until 2035 and beyond for greater complexity.
An iconic Chablis estate, Domaine Dauvissat is now considered among the greatest producers of white Burgundy. The estate has been in the family for three generations. René, Vincent’s father, and before him his grandfather Robert, both worked the vineyards and bottled their own wines. Vincent has been running the domaine under his own name since 1989. Today, his daughter Étiennette works alongside him.
The estate’s 12 hectares span all four local appellations: Petit Chablis, Chablis, Chablis Premier Cru (6 ha) and Grand Cru (2.7 ha). The vines have been farmed biodynamically since 2002, though the domaine does not seek certification. Winemaking is low-intervention, with minimal sulphur use. The wines have outstanding ageing potential; each climat gradually reveals the full complexity of its terroir over time.
