Champagne Cazé Thibaut, vineyard located in Châtillon-sur-Marne between Épernay and Château-Thierry. Fabien Cazé took over the family estate 14 years ago, in 2007, but waited until 2013 to sign his first vintage; the time needed for the soils and vines to fully adapt to the complete transition from conventional to natural farming. Fabien has taken the time to create Champagnes in his own image, with a parcel-based approach rooted in observation and experimentation, constantly refining his knowledge. A mindset of continual questioning, self-reflection, and attentiveness allows him to reveal the living essence of his high-slope terroirs where the bedrock lies close beneath the surface.
