Mas des Chimères is one of the leading estates of the Terrasses du Larzac appellation. Located in the village of Octon, on the edge of Lake Salagou, Guilhem Dardé established his own winery in 1993. He began vinifying his own grapes, which had previously been sold to the local cooperative, and abandoned polyculture (the traditional family practice at the time).
Guilhem, who likes to describe himself as a paysan vigneron (farmer-winemaker), has worked organically from the very beginning, respecting all forms of life and constantly seeking the purest expression of his diverse and complex terroirs. With alternating red and basaltic soils, the wines are marked by rare finesse, mineral freshness, and aromatic complexity. Since 2008, his daughter Maguelone has also been working alongside her parents.
