Terroir: Shallow stony clay-limestone soil on south-facing limestone rock, steep slope, Altitude 500 m

Vinification / Aging: alcoholic fermentation in barrels (600L, 3 to 6 wines), aging on lees for 12 months.

Tasting Notes: A beautiful gastronomic wine with lovely minerality balanced by significant volumes of white fruit. Can be aged further!

🍷 Serving temperature 12°, can be aged for 10 years.

Julien Mareschal, a young winemaker in the marly valleys of Pupillin, cultivates 5 hectares of vines. The terroir is on a steep slope, requiring manual soil work without chemical products. He is part of that excellent generation of organic/biodynamic winemakers in the Jura, where respect for the terroir translates into biodynamic principles, natural grass cover, and soil work (plowing, hilling, raking...). He masters minimizing SO2 doses, and fermentations use native yeasts from the terroir. The estate has practiced Organic Agriculture since 2012. Julien is deeply committed to local Jura traditions, as reflected in his cuvées. The Ploussard, Trousseau, Pinot Noir, Chardonnay, and Savagnin grape varieties express themselves through different parcels whose soils and exposure define their typicity, thus producing terroir wines.
