Terroir: Superficial clay-limestone on deep blue marl from the Lias period, west-facing, steep slope, Altitude 450 m
Vinification / Aging: Alcoholic fermentation in barrels (600L, 3 to 6 wines), aged on lees for 12 months.
Tasting Notes: A beautiful, linear palate, with freshness and saline notes.
🍷 Serve at 12°C, can be aged for 10 years.

Julien Mareschal, a young winemaker in the marly valleys of Pupillin, owns 5ha of vineyards. The terroir is on a steep slope, with manual soil work and no chemical products. He is part of this excellent generation of organic/biodynamic winemakers in the Jura, where respect for the terroir is reflected in the principles of biodynamics, natural grassing, and soil cultivation (ploughing, hilling, harrowing...). SO2 doses are kept to a minimum, and fermentations use indigenous yeasts from the terroir... The estate has been practicing Organic Agriculture since 2012. Julien is very attached to local Jura traditions, as are his wines. The Ploussard, Trousseau, Pinot Noir, Chardonnay, and Savagnin grape varieties express themselves through different parcels whose soils and exposure define their typicity, thus producing terroir wines.
