Terroir: Gray and blue shaley marls from the Lias period, steep slope, altitude 400 m
Vinification / Aging: Alcoholic fermentation in large oak casks (600l to 1500l), ouillé aging on lees for 20 months
Tasting Notes: Lemon butter! It has body and beautiful tension. Perfect with a cheese platter or poultry with morels!
🍷 Serving temperature 12°, can be aged for 10 years.
Julien Mareschal, a young winemaker in the marly valleys of Pupillin, owns 5 hectares of vines. The terroir is on a steep slope, with manual work of the soil and no chemicals used. He is part of this excellent generation of organic/biodynamic winemakers in the Jura, where respect for the terroir is reflected in the principles of biodynamics, natural grassing, and soil work (ploughing, hilling, scratching...). He minimizes SO2 doses and uses native yeasts from the terroir for fermentations. The estate has been practicing organic farming since 2012. Julien is very attached to local Jura traditions, as are his wines. The Ploussard, Trousseau, Pinot Noir, Chardonnay, and Savagnin grape varieties express themselves through different plots whose soils and exposure give them their typicity, thus producing terroir wines.
