Winemaking / Aging: semi-carbonic maceration, aged in barrels (228L, 3 to 5 wines) for 10 months.

Julien Mareschal, a young winemaker in the marly valleys of Pupillin, cultivates 5 hectares of vines. The terroir is on a steep slope, with manual soil work and no chemicals. He is part of this excellent generation of organic/biodynamic winemakers in the Jura, where respect for the terroir is reflected in biodynamic principles, natural grassing, and soil work (ploughing, hilling, harrowing...). Sulfur dioxide doses are kept to a minimum, and fermentations use indigenous yeasts from the terroir. The estate has been practicing organic farming since 2012. Julien is deeply attached to local Jura traditions, as are his cuvées. The Ploussard, Trousseau, Pinot Noir, Chardonnay, and Savagnin grape varieties express themselves through different parcels whose soils and exposure give them their typicity, thus producing terroir wines.
