Grape Variety : Pinot Noir

From the "Adroit du Val Suzeau" climate, the vines, less than 10 years old, are rooted in a clay-limestone soil with deep marl, rich in small fossilized oyster shells on the surface.
Located between 227 and 247 m altitude, the plots benefit from a northern/southern exposure, ventilated by a prevailing south-westerly wind.
Aged in barrels of 1 to 5 wines for 15 to 19 months, which refines the texture while respecting the precision of the terroir.

The first traces of Domaine Goisot date back to the 14th century in the village of Saint Bris le Vineux in the Yonne department in northern Burgundy. The estate spans 30 hectares across the communes of Saint Bris, Irancy, and Chablis.

In 1979, when Ghislaine and Jean-Hugues took over the family estate, working with respect for their land was paramount to them. Certified Ecocert since 2001 and Demeter since 2005, Guilhem and his wife Marie have continued this philosophy.
The vines are planted at 10,000 vines/hectare instead of 4,500 to 7,000 vines/hectare, which is common in the Yonne. This choice has paid off as they obtain more complex and smaller grapes with better ripeness. Indeed, the choice to increase density promotes competition among the vines. If treatment is necessary, they use 100% natural products (rock powders and plant decoctions...). Similarly, to stimulate soil life, they choose to spread humus on certain plots without ever using fertilizer. This approach is maintained all the way to the bottle. Their philosophy is entirely dedicated to producing authentic and healthy wine for both humans and nature.

Domaine Goisot has become a benchmark in Burgundy wines, produced biodynamically, crafting cuvées of exceptional consistency every year. Difficult years unfortunately follow one another with ferocious frost episodes in this sector. Nevertheless, their cuvées remain pure, linear, and each terroir is represented with great sensitivity in the bottle. The small yields imposed by Mother Nature do not allow for large volumes year after year for this small estate, and we are very proud to represent them.
