Appellation: DO La Mancha, Castilla La Mancha, Spain
Winemaking: Non-interventionist philosophy. The Tintorera is destemmed at 50%, then aged for 8 months in cement tanks. The Moravia Agria is fully destemmed and after 7 days of maceration, is placed in 228-liter French barrels for 8 months.
Aged on lees but without bâtonnage (lees stirring). The only addition of sulfur is at bottling.
Tasting: A fresh, fruity wine with herbaceous notes. A lot of elegance. To be drunk as an aperitif, with roasted chicken, oven-baked lasagna. 🍷 16-18°C
EnvĂnate is a project created by 4 friends, Roberto Santana (Canary Islands), Alfonso Torrente (Ribeira Sacra), Laura Ramos (Murcia) and JosĂ© MartĂnez (Almansa), who met in 2005 during their viticulture studies at the University of Alicante, Miguel Hernández. Since 2008, they have been part of a new generation of winemakers in Spain with vineyards in Galicia, Tenerife, Extremadura, and Almansa. Their goal: to produce wines that respect the wine and represent the different terroirs they are fortunate enough to work with.
