Tasting: This is a beautiful dense and elegant wine, with a lovely luminous dark color, aromas of spices and black fruits, and a taut palate with fine tannins. A beautiful juicy and surprising personality!

Sébastien Lavaurs is a winemaker in Cantal, on the border between Lot and Aveyron, not far from Pauline Broqua or the winemakers of the Marcillac appellation! In 2016, Sébastien decided to become a winemaker at the place called "Le vignoble" (The vineyard), where 40 hectares of vines once stretched; there was practically nothing left when Sébastien settled there. So, he first planted 3 hectares of red grape varieties, and then white ones, including the rare Souvignier gris, Chenin, and Romarantin!
The vines are located at an altitude of 380 meters, in a hilly and protected landscape. The wines are naturally vinified, using indigenous yeasts and with minimal manipulation. Aging takes place in vats or barrels. The wines are neither fined nor filtered, and very little or no sulfites are added.
