It was in 1563 that Queen Jeanne d'Albret discovered the castle of Tout-y-Croît, in the heights of Béarn (64), at the gateway to the Pyrenees, and gave it her name because of the magnificent fruits that were served to her there ...

Today, the castle is surrounded by a preserved green setting, far from the hustle and bustle of traffic, with several dozen hectares managed using organic farming methods, where century-old trees and old fruit trees punctuate the visitor's journey.

An orchard was replanted in 2024 to provide the majority of the fruit used in La Reine s'Amuse's fruit creations: cornelian cherries, elderberries, apples, blackberries, plums, raspberries, cherries, and more. Other fruits come from local producers, also certified organic: this is the case for blueberries and Roussanne peaches. Finally, fruits not available near the château are purchased at the market and selected for their quality and their French origin, as locally sourced as possible (e.g., apricots, strawberries).

The sugar used is organic cane sugar and if we need to use a gelling agent for certain preparations, we have chosen Agar-Agar, which is a natural gelling agent derived from seaweed with numerous health benefits.

Everything is prepared with care and love, in the hope of sharing with you a part of the sweetness of this little paradise on earth that is Tout-y-Croît.
