Grape variety: 100% Melon de B(ourgogne), from the lieu-dit L’Herbray
Vinification & ageing: Hand-harvested and naturally vinified: direct pressing, slow fermentation, and just over 10 months of ageing in underground vats. Unfined, unfiltered, bottled with only a micro-dose of sulphur.
Tasting notes: A mineral and elegant Melon, fresh and saline, the kind of wine everyone agrees on, to be opened without hesitation whenever thirst strikes!
🍷 Serving temperature: 10–12°C
Antoine Delaunay, a young 36-year-old winemaker, returned to the family estate in 2015 after completing his studies. Organic conversion had already begun in 2011 under the guidance of his father Philippe. They soon stopped selling grapes to négociants and gathered the parcels together to create Delaunay Vignerons. Today, the 28 hectares are carefully tended, the grapes are vinified naturally, and extended ageing on the lees is applied to several cuvées. A fine piece of work!
