Grape variety: Trousseau from the “Les Boutonniers” parcel.
Terroir: Iridescent marl from the Upper Triassic Keuper formation in the subsoil, with limestone scree and bands of dolomite (magnesian limestone) at the surface.
Tasting notes: 5–7 days of maceration. A brilliant, translucent colour (reminiscent of Poulsard), with aromas of red berries and citrus zest. The palate is floral and spiced, with notes of kumquat, ethereal tannins, and a super fresh finish of early morning orange blossom. A true gem!
🍷 Serve at 16°C
Céline established her wine estate in 2008 with the acquisition of the “Les Combes” parcel, followed by additional plots in 2010 - totalling 3.65 hectares. To launch the winery, she received support from the "Terre de Liens" land trust, as well as a community-based system similar to an AMAP, with 71 participating families!
From the beginning, the estate has been organically farmed, guided by biodynamic principles. With the help of her horse, Octavia, Céline tends her vines - soil work is done mechanically, compost is spread by Octavia, and all other tasks are carried out by hand.
The vines are rooted in the iridescent marl of the Upper Triassic Keuper formation, where bands of dolomite (magnesian limestone) can be found - the inspiration behind the domaine’s name.
