Grape variety: Chardonnay from the “La Chaux” parcel, planted 35 years ago in the village of Nevy-sur-Seille, not far from Château-Chalon.
Terroir: Steep slopes of limestone scree.
Tasting notes: A buttery, floral nose with notes of spring water. The palate is sapid and dense, broad and complex, finishing with lovely bitters and grip.
🍷 Serve at 10–12°C
Céline established her wine estate in 2008 with the acquisition of the “Les Combes” parcel, followed by additional plots in 2010 - totalling 3.65 hectares. To launch the winery, she received support from the "Terre de Liens" land trust, as well as a community-based system similar to an AMAP, with 71 participating families!
From the beginning, the estate has been organically farmed, guided by biodynamic principles. With the help of her horse, Octavia, Céline tends her vines - soil work is done mechanically, compost is spread by Octavia, and all other tasks are carried out by hand.
The vines are rooted in the iridescent marl of the Upper Triassic Keuper formation, where bands of dolomite (magnesian limestone) can be found - the inspiration behind the domaine’s name.
