In the commune of Assignan, Hildegard Horat and Alioune Diop cultivate 8 hectares at an altitude of 300 meters, in a wind-swept region (no less than 13 different winds) and make wine in ancient buildings that once belonged to the Knights of the Order of Malta. Malbec, Syrah, Cabernet Franc and Sauvignon, as well as Viognier and a surprising Petite Arvine reminiscent of Hildegard's Swiss origins, are grown organically and vinified with little to no additives.
