In the commune of Assignan, Hildegard Horat and Alioune Diop cultivate 8 hectares at an altitude of 300 meters, in a region swept by winds (no less than 13 different ones), and vinify in old buildings said to have belonged to the Knights of the Order of Malta. Malbec, Syrah, Cabernet Franc and Sauvignon, as well as Viognier and a surprising Petite Arvine reminiscent of Hildegard's Swiss origins, are grown organically and vinified with little or no intervention.
