Ancestral method – no added sulphites – residual sugar approx. 9 g/L
Bottled for secondary fermentation in October 2022 – disgorged January 2025

Tasting notes: Pale in colour with green highlights. The nose shows fruity aromas of lemon and verbena. The bubbles are lively yet delicate on the palate, with creamy fruit and a beautiful tension from bright acidity; think pear tart. The finish is mineral and saline.
