Grape Variety: Chardonnay
Aging: Aged under flor (sous voile)
Tasting Notes: A radiant golden colour with expressive aromas of baked apple, citrus zest, and hawthorn, complemented by subtle oxidative nuances. On the palate, it offers a harmonious balance, with a well-defined structure, lively mineral freshness, and a long, lingering finish marked by delicate oxidative notes.
Food Pairing: Nothing better than an aged Comté cheese with tyrosine crystals!
Michel Gahier trained for some time with Jacques Puffeney, the renowned winemaker from Montigny, before settling nearby. Known as a discreet yet deeply principled vintner, he follows traditional winemaking methods with meticulous vineyard care; using no additives and, at most, a minimal touch of sulfites when necessary.
