Tasting note: Beautiful texture, plenty of fruit, freshness, and above all a vibrant, striking acidity that evokes graphite and pencil lead. An intriguing and well-judged curiosity; thank you, Luc!

🍷 Serving temperature: 16–17°C; decant 1 hour beforehand.

Perched in Corconne, north of Montpellier on the Gard side, Domaine Zélige-Caravent stretches across a mosaic of small parcels nestled in the heart of the garrigue. This typically Mediterranean landscape offers precious geological diversity. The limestone soils, scattered with small gravels, bring a distinctive freshness to the wines. The vineyard is farmed according to biodynamic principles, with close attention to the rhythm of the seasons and lunar cycles. Each parcel is tended by hand, from winter work through to harvest. The manual picking ensures that only the healthiest, ripest grapes are selected. Vinification relies on spontaneous fermentations with no added inputs, preserving the authentic expression of the terroir. The wines are then aged in concrete tanks to maintain their natural balance.
