After gaining invaluable experience working alongside renowned winemakers such as Tempé-Alsace, Gauby-Roussillon, Yvonne-Anjou, and Clos Rougeard, Sylvain Dittière chose to establish himself in Anjou, in Montreuil-Bellay, in 2010. He proudly cultivates 6 hectares of old vines, primarily planted with Chenin and Cabernet Franc, along with a few plots of Sauvignon. His philosophy, resolutely focused on respect for life, is reflected in the care given to both the vines and the cellar. His meticulously pampered vines benefit from long and delicately infused macerations, which allow for the extraction of all the finesse of the tannins and the brightness of the fruit. Whether white or red, his wines are aged with exemplary patience – up to 24 months – to give them the necessary time to settle and fully develop. Furthermore, he is fortunate to be able to age them in his splendid cellar, a former local stone extraction site, guaranteeing optimal aging conditions.
