Terroir: Clay-limestone on 22-year-old vine plots.
Vinification / Aging: Long whole-bunch pressing. Followed by cold settling then spontaneous alcoholic fermentation is started in vats by indigenous yeasts. Then the juice is transferred into 9 to 11-year-old barrels. Malolactic fermentation is carried out on fine lees during the 12-month aging in barrels.
Tasting notes: Expressive nose with notes of exotic fruits, and milky and buttery notes. On the palate, the wine unfolds between a perception of richness and minerality, supported by a beautiful crisp acidity and slight autolysis.

The estate is located in Aragon, in Cabardès, north-west of Carcassonne, on the first foothills of the Massif Central, at the crossroads of southern and Atlantic winds.
It is composed of two terroirs: clay-limestone on bedrock of ancient lake beds called "alveoline limestone", and hard limestone from Ventenac. These two terroirs are located at an altitude of 300 meters in a setting of wild Mediterranean nature.
