This saké is produced by Alexandra and Kôhei in the Pyrénées-Atlantiques, in Castetnau-Camblong.
Ingredients: Water, Maratelli rice, Kôji, lactic ferments
Rice grower: El Alcaravan in Navarre, Spain
Type: Smooth and rounded, suited to the aperitif or dessert. It is unfiltered.
Tasting Notes: Ama offers a silky and pleasant mouthfeel, with a blend of sweetness and acidity evoking pineapple and citrus. It is made using ancestral fermentation methods, in the Bodai style originating from a temple in Nara, a method that had almost disappeared with the rise of mass production. Adding to its uniqueness, the fermentation includes lactic cultures derived from sheep’s cheese. Naturally, this saké pairs beautifully with local cheeses.
🍷 Recommended serving temperature: Chilled or gently warmed in a water bath up to 40°C
In Japanese, Ama carries many meanings. It refers to the women of the sea, generations of deep-sea divers, free-diving for millennia. While the word evokes femininity and the ocean, it also refers to the sky, and to the sun goddess Amaterasu, “the one who illuminates the heavens.” The sun, the sky, and water, threads connecting all life, and quite naturally, “mama” in Basque.
