Thank you for coming to the Cellar in such numbers to choose and offer the wines, champagnes, and spirits from our selection! We hope that your festive meals were illuminated by them… ;)

As for us, our beautiful poultry was accompanied by a lovely bottle of Cornas (a Northern Rhône Valley cru - 100% Syrah) vintage 1990 in perfect health, all in delicacy! Thirty-three years of patience to delight our senses, always an incredible marvel! When a wine is kept in good conditions, from an anthology year, the magic happens.... A scent of fine spices, slightly smoky, a palate like a long caress, very sensual and still fresh, capable of going even further.....

But how to be so patient? Storage conditions must be impeccable: fairly stable temperatures that can fluctuate but slowly (in either direction) between 8 and 14 degrees Celsius, necessary humidity (60/80%) to keep the cork well expanded, and no light or vibrations. Thus, a ten-year-old wine will still appear young. If it's not possible to have an underground cellar or a cool barn, a wine cabinet is perfect, but prioritize equipment with serious after-sales service and the longest possible warranty.

For those who are doing "Dry January"... take the opportunity to set aside a few bottles and try to forget them for the future!? :))) Among our selection, we could recommend the white Sancerres from François Cotat, the Jurançons from Clos Larrouyat, the Côtes du Rhône or Châteauneuf du Pape from Laurent Charvin, the Rieslings from Denis Hebinger and some beautiful white and red Burgundies from Christophe Diconne in Auxey Duresses in Côte de Beaune... with these, you'll be well-armed to defy time!

Champagnes, as delicious to drink now but also good to keep for a few years... This festive month, we received Champagnes from Aurélien Clément in Congy (Petit Morin Valley), Aurélien Suenen and Frères Mignon in Cramant (Grand Cru - Côte des Blancs) and Pascal & Ambroise Agrapart in Avize (Grand Cru - Côte des Blancs). Such beautiful wines that we adore, with character, mineral tension, fine, fine, fine bubbles... and a presence that marks the mind and palate. To treat yourself all year round!!

This wasn't just a month for the arrival of age-worthy wines! The Alsace wines from Agathe Bursin, Roland Schmitt or Denis Hebinger have arrived. Riesling, Gewürztraminer, Pinot Gris, Pinot Noir or blends...

The easy-drinking and fruity wines ofGuillaume Noire in Anjou; natural, juicy, essential! The Muscadets ofAntoine Delaunay and his Château Thébaud 2015 vintage, aged for 4 long years underground in ceramic tanks.

"Oh!!! La Roue Voilée" byJean-Pierre Proharam – a very happy accident in the cellar... a wine aged under a veil of yeast, with subtle oxidative notes, simply delicious and born here in the Jurançon region! What a surprise!

And an easy-drinking wine from Cahors! Yes, it's possible :) It's a Jurançon Noir with a flowing texture based on freshness and gourmandise, with ripe and round tannins fromClos Siguier.
