At Cave du Palais, we have focused our alcohol-free selection on unique beverages, designed for true gastronomic pairings.
These are neither de-alcoholized wines nor spirits... absolutely not! We prefer to invite you to discover a whole new universe, made of bucolic experiences.
Our taste perceptions are constantly evolving. Psychologically, our brain looks for familiar cues: a wine-shaped bottle suggests a wine taste, as does a beautiful stemmed glass, and a golden hue reminds us of white wine... Yet, these drinks do not operate on the same sensations or organoleptic flavors.
They require something else: learning to taste differently, opening your palate to new associations and other sensations.
These drinks are often very complex, combining buds, stems and roots, leaves and flowers, fruits and pulps, cereals, seeds and pits... The "Balade Minérale" contains a maceration of crushed oyster shells; "Nivers n°5" relies notably on an extraction of citron and bergamot; "Partie dans les Feuilles" blends fig leaves with lemon balm as well as linden flower and spruce tinctures; "Oihana Amazaké" and its koji (aspergillus oryzae)... All, balanced with many other ingredients, give rise to complex and exciting drinks.

To extend the sweetness of the holidays, January calls us to crown the kings. Whether you're team frangipane galette or candied fruit couronne, indulgence is on the menu. It's an opportunity to pop some corks again, but after the festive champagne, we turn rather to ciders and perries. Basque or Norman, choose your side ;)
Gadyamb's Arranged Rums, a little piece of Réunion
Julien, a native of Réunion, now living between Pau and Bordeaux, has always remained very attached to his roots. He therefore had the idea of developing a range of arranged rums using only raw materials from the intense island. First, rum from the best distillery: "Savanna," to which he adds fruits, spices, and plants! Even the syrup is made from Réunion sugar. We're telling you, he's thorough. Discover Passion Fruit/Pink Peppercorn, Café Pointu (endemic coffee with a slightly bitter taste)/True Bourbon Vanilla... or the "Tizane" rum, an original recipe with medicinal properties where many plants and spices are combined to create a kind of "Chartreuse" of the Indian Ocean. Balanced, lightly sweetened, and delicate arranged rums, a true journey that warms the body in these chilly times!
