Domaine de la Borde by Julien Mareschal, a young winemaker in the marly valleys of Pupillin, consists of 5 hectares of vines aged 7 to 77 years. The terroir is on a steep slope, worked manually and without chemicals.
Julien Mareschal is part of this excellent generation of organic and biodynamic winemakers in the Jura, where respect for the terroir is reflected in the principles of biodynamics, natural grassing, and soil work (ploughing, hilling, raking...). He masters the minimal use of SO2, and fermentations use indigenous yeasts from the terroir... The domain has been practicing Organic Agriculture since 2012.
Julien is very attached to local Jurassian traditions. His cuvées reflect this attachment. The Ploussard, Trousseau, Pinot noir, Chardonnay, and Savagnin grape varieties express themselves through different plots whose soils and exposure define their typicality, thus producing terroir wines.
The cuvées: Ploussard "Côte de Feule", Chardonnay "Terre du Lias", "Côte de Caillot", or Savagnin "Les Ecrins" are the cuvées that reflect his attachment to the principle of terroir. Other particular cuvées also pique the curiosity of wine lovers, such as "Foudre a Canon" (Savagnin aged in "ouillé" for 18 months) or the intriguing "Vice Versa" version....
