CHANDON DE B Savigny Lès Beaune Les Lavières 1er Cru 2020 75cl Red
Grape variety : Pinot Noir
Terroir : Mid-slope with a limestone dominance, the finest part of the appellation (Lavières comes from the word Lave, which has nothing volcanic here, but was the term formerly used to describe flat limestone stones used for roofing). These are indeed these famous stones that we find here in the subsoil. Vines over 50 years old.
Tasting notes : beautiful brilliant color, crunchy nose of red fruits and sweet spices, explosive fruit on the palate while maintaining a supple texture, the finish is dictated by this limestone slab which brings tactile minerality on the tongue and palate and a fresh, stony and mentholated sensation.
🍷 Serving temperature 16°, decant 2 hours before serving or great aging potential.
Domaine Chandon de Briailles, located in the Côte de Beaune, has belonged to the same Chandon family since 1834! Today, Claude and François, heirs of their Grandmother Countess Chandon, work with precision to honor their magnificent vineyard heritage.
The area covers 13.7 hectares equally divided among the three communes of Savigny-Lès-Beaune, Pernand-Vergelesses, and Aloxe-Corton. 30 small plots are cultivated.
Claude and François received strong guidance from their mother at the estate. These two, very complementary, each gained solid experience before taking over the estate, Claude in the 90s and François 10 years later. Claude notably created a laboratory to ensure precise monitoring of the wines; François, in his previous life as a wine merchant, was highly sensitized to tasting wines from biodynamic practices. It was thus natural for him to initiate the conversion of his vineyard to biodynamic farming.
Organic farming has played an important role in the estate since the 1980s. Nadine de Nicolay realized very early on the absurdity of the entire existing range of chemical treatments for vines. From then on, the estate naturally resumed working the soil. 5 horses have also been working the plows since 2014.
The estate has been Demeter certified since 2018. Due to the deep rooting of the plant it causes and its completely natural aspect, biodynamics gives wines an inimitable texture on the palate and aromatic complexity. The wines are enhanced and are of incomparable elegance and charm. This meticulous work makes it possible to precisely reveal the aromatic identity of each climate.
In the cellar, all wines are aged in old barrels. The goal is not to heavily intervene in the winemaking and aging process of the wines, but simply to guide nature. The wines each reflect the particularity of their climate and can be appreciated at different moments of their life, for the wisest and most patient...
