In La Livinière, on the foothills of the Montagne Noire, Anne-Laure and Julien cultivate a small 3.5-hectare vineyard that belonged to his father, grandfather, and great-grandfather. These are 9 plots surrounded by dry stone walls that are farmed biodynamically with the utmost respect for the terroir and biodiversity (Demeter certification in 2020). The clay-limestone dominant terroirs consist of several grape varieties, including old Grenache Noir and Carignan vines.

Their respect for the land and the vines drives them to work as manually as possible to avoid soil compaction, right up to the manual harvest carried out entirely in crates to keep the grapes intact until fermentation. Vinification takes place in stainless steel tanks for a gentle and slow extraction of aromas. The aging process is then carefully adapted to the vintage and grape variety to accompany the wine in a slow maturation, either in tanks or in used barrels of 228 to 500 liters. No filtration or fining. The wines are natural, full of fruit, and endowed with mineral salinity.
