Grape varieties: Blend of white and grey Grenache

Vinification: Whole bunch pressing to express a must with white fruit aromas. Fermentation in large capacity barrels (500 Liters), always maintaining a low temperature. Traditional aging continues on lees, with regular stirring.

Terroir: The soils consist of red and yellow clays mixed with calcite fragments, a major characteristic of the Aspres terroir. The site is preserved in the middle of the garrigue of the Castelnou plateau, at an altitude of 300 m.

Tasting: Its color is pale and brilliant yellow. The nose reveals floral notes of broom and white fruits, supported by a hint of citrus. On the attack, the texture is ample and enveloping. The aromatic complexity reveals aromas of dried fruits, white fruits, as well as a beautiful saline minerality on the finish.

David Château, the winemaker, pursued a career in agriculture and winemaking, with experiences in Burgundy, Oregon, and Bordeaux. His journey then led him to Domaine du Mascareil, in Castelnou (66), where he immediately established his estate with an organic and biodynamic approach (AB and Demeter certifications), aiming to create a living and balanced ecosystem.

A 6-hectare vineyard nestled in a cool spot at an altitude of 300 meters in the Aspres, in the heart of preserved nature; the vines, surrounded by Mediterranean garrigue, are located on a terroir of red and yellow clays mixed with limestone fragments. Planted only with indigenous grape varieties such as Carignan, Grenache, and Mourvèdre (some of which date back to 1962).
