FRANCOIS DE NICOLAY
François de Nicolay is co-manager of Domaine Chandon de Briailles with his sister Claude. It was upon his return to his Burgundian roots in the 2000s that he envisioned a small négociant house “winemaker – grower – bottler”. Just as with his own estate where biology and biodynamics have been at the heart of their concerns for many years, the supply of grapes and musts aligns perfectly with this philosophy for his new venture. Based on the observation that good wines can only be made with good grapes, this house offers pure wines without additives! Once purchased, the musts or wines are aged in an old cellar in Savigny-Lès-Beaune. This artisanal approach allows for no added sulfur, preserving the wine's original freshness.
