GUILLAUME LAVIE
Guillaume Lavie, after a first experience in Bugey where he was already crafting fine gastronomic wines from a tiny rented vineyard, finally found his happiness in the Nantes region. Indeed, he set his sights on beautiful plots in the small village of Gorges. In 2020, he became the owner of 10 hectares that belonged to "Denis" (hence the name of one of his cuvées), and thus continues his meticulous work to produce beautiful gastronomic white wines. His vineyard was immediately converted to organic farming. He has a very traditional and common-sense approach to his vineyard. His perspective is holistic; every microorganism is important and forms a whole. Moreover, for him, no two years are alike in the vineyard, and daily observation dictates whether or not to intervene, when to treat, or when to lay down the grass, for example. In winter, sheep complete his work!
