Terroir: Clay-limestone

Aging: 24 months in 500L barrels. Bottled after 30 months of aging without filtration during a descending moon.

Tasting: Elegant and voluptuous wine, with aromas of red fruits and slender tannins.

In the commune of Assignan, Hildegard Horat and Alioune Diop cultivate 8 hectares at an altitude of 300 meters, in a region swept by winds (no less than 13 different ones), and make wine in old buildings that are said to have belonged to the Knights of the Order of Malta. Malbec, Syrah, Cabernet Franc and Sauvignon, as well as Viognier and a surprising Petite Arvine reminiscent of Hildegard's Swiss origins, are grown organically and vinified with little to no additives.
