LES EMINADES

We are in Cébazan (34), in the diverse terroirs of Saint-Chinian, with Patricia and Luc Bettoni, who have been running Les Eminades since 2002. On soils of red sandstone, limestone, and schistous marl, with the presence of flint and rolled pebbles, old vines of Carignan (planted in 1902), Cinsault, Syrah, and Grenache, combined with younger Mourvèdre vines, produce complex and elegant wines, a far cry from certain "bodybuilder" Languedoc wines with excessive heat.
