David Château, winemaker, trained in agriculture and oenology, gaining experience in Burgundy, Oregon, and Bordeaux. His path then led him to Domaine du Mascareil in Castelnou (66), where he immediately converted the estate to organic and biodynamic practices (AB and Demeter certified), with the aim of creating a living, balanced ecosystem.

The 6-hectare vineyard is nestled in the cool at 300 metres altitude in the Aspres, in the heart of unspoilt nature. The vines, surrounded by Mediterranean garrigue, grow on a terroir of red and yellow clays interspersed with fragments of limestone. The vineyard is planted exclusively with indigenous grape varieties such as Carignan, Grenache, and Mourvèdre (some dating back to 1962).
