Grape Variety: 100% Chardonnay
Terroir: Typical Kimmeridgian limestone soils of Chablis, rich in marine fossils. Vines cultivated according to organic and biodynamic principles.
Vinification: Fermentation in stainless steel tanks, followed by partial aging in old oak barrels for several months on fine lees, without excessive bâtonnage. Bottled without extensive filtration, respecting the pure and taut style of the estate.
Tasting Notes: Pale gold color with silver reflections. Nose of peach, nectarine, white flowers, anise, hazelnut, mineral notes of honey, wet stone. On the palate it is ample, dense, satiny, with a lively and well-integrated acidity, a long and mineral finish, sometimes with iodized accents.
🍷 Serve at 10–12°C. Enjoy from 2025 for its freshness, or cellar until 2035 or beyond for more complexity.

An emblematic Chablis estate, Domaine Dauvissat is now among the greatest white wines of Burgundy. The estate has been cultivated for three generations. René, Vincent's father, and before him Robert, his grandfather, already worked their vines and bottled their own wines. Vincent has managed the estate that bears his name since 1989. Today, Étiennette, Vincent's daughter, also works alongside her father.
The estate's 12 hectares of vines cover the four local appellations: Petit Chablis, Chablis, Chablis 1er Cru (6 ha) and Grand Cru (2.7 ha). The vines have been cultivated biodynamically since 2002 without claiming certification. Vinifications are very low-intervention, with little sulfur. The wines have a very great aging potential; each of the climats will develop and fully reveal the complexity of its terroir.
