Grape varieties: 45% Tannat, 40% Cabernet Franc & 15% Cabernet Sauvignon on limestone soils
Terroir: Sandstone and limestone. Rocky, poor soils with good drainage, in which the vine thrives
Vinification / Ageing: Vinification and ageing on lees for 24 months, alternating between stainless-steel tanks and multi-use oak barrels (15 to 18 months).
Tasting notes: A delicious cuvée full of velvet and finesse. The nose is very expressive with black fruit aromas, while the palate is silky, where minerality plays with beautifully refined tannins. A very noble mouthfeel.
🍷 Serving temperature: 18°C, decanting recommended 1 to 2 hours before serving
Domaine Ilarria, in the AOC Irouléguy appellation, is located in the valleys of Saint-Jean-Pied-de-Port and Baigorry. Established for several generations on 10 hectares of vineyards, the estate is among the organic pioneers of the appellation. Always striving to work in harmony with nature, the domaine draws inspiration from the principles of Japanese microbiologist Masanobu Fukuoka. The wines are neither chaptalised nor deacidified, and no other chemical interventions are used. Sulphur levels are kept very low in order to preserve all the wine’s organoleptic qualities.
