Tasting notes: a beautiful, complex and fine nose of red and black fruits, a lean palate with lovely silky tannins, good length tamed by a nice acidity.

Patrick Rols, supported by his brother Joël, is settled on the heights of the magnificent village of Conques in Aveyron! The estate covers 6 hectares in total, 4.5 in red and 1.5 in white, on superb schist terroirs. The project began in 2003, and at the time the Marcillac AOC refused their request to plant the Fer Servadou grape variety (the famous local Mansois!) because Conques is not part of this appellation area. They therefore decided to plant 50% Merlot, supplemented by a little Cabernet Franc and Cabernet-Sauvignon; for the whites, Chardonnay and Chenin are planted partly on terraces. The wines are entirely natural, with no added sulfites, the reds are infused for a long time to promote slow and gentle extraction of the tannins. Their wines have a surprising natural acidity given by the schists, which bring minerality, length and complexity.
