Tasting notes: An original white Burgundy produced on the hillsides of the small village of Champlitte, north of Dijon in Haute-Saône. This wine combines a lively, intensely fruity character with the depth of noble ageing; and all without added sulphites.

François de Nicolay is co-manager of Domaine Chandon de Briailles with his sister Claude. Upon returning to his Burgundian roots in the 2000s, he envisioned a small-scale négociant business focused on vinification, ageing, and bottling. Just like at his family estate, where organic and biodynamic practices have long been a priority, all grape and must sourcing for this project follows the same philosophy.
Based on the principle that great wines can only come from great grapes, this micro-négociant house produces pure wines without additives. Once the musts or wines are purchased, they are aged in a traditional cellar in Savigny-Lès-Beaune. The hands-on, artisanal approach allows François to avoid adding sulphur, preserving the wine’s natural freshness and vitality.
