Grape varieties: 70% Graciano & Grenache Noir
Terroir: Brown limestone soils. Grapes sourced from the vineyards of Bodegas Quaderna Via (Iguzquiza – near Estella).
Vinification: 3-week maceration with pump-overs. Aged for one year in old 700L, 600L, and 228L barrels.
No SO₂ added at bottling, though a small amount was used after malolactic fermentation.
Final total SO₂: less than 10 mg/L

Imanol Garay, originally from San Sebastien, is a unique winemaker with a diverse artistic spirit. A former cooper, he crafts wines with a deep intuition and connection to the vineyards. Drawing inspiration from his experiences across the Pyrénées, he sources grapes from both the French and Spanish sides, gradually planting his own vines. His wines are personal and vibrant, reflecting his distinctive approach. Beyond winemaking, Imanol is also a talented artist, painting all of his wine labels, and a gifted pianist. With a piano in the heart of his wine cellar, he plays to his barrels, bringing music into his winemaking process. Currently, he is working on an album of his own compositions, set to be released on vinyl, blending his artistic passions with his craft.
