Grape varieties: 50% Clairette, 40% Macabeu, and Ugni Blanc
Vinification / ageing: Hand-harvested grapes, manually sorted, indigenous yeasts, direct pressing, aged 90% in tank, 10% in barrel
Tasting notes: The nose reveals floral and citrus aromas. On the palate, a lively, slightly aniseed attack gives way to notes of white-fleshed fruit and a subtle saline touch on the finish.

Jérôme Chastagnol works in the vineyards and vinifies grapes from his friends in the Drôme region. His wines strike the perfect balance between generosity and depth; easy to drink yet full of substance and precision.
Jérôme honed his craft by working with renowned winemakers from different regions: Rhône Valley with Sylvain Bock, Mâconnais with Tripoz, Beaujolais with Yvon Métras.
With no inherited land or vineyards, Jérôme established a small négociant business, purchasing organic grapes from the Montélimar area. His winery is set in a troglodyte cave in Saint-Restitut, Drôme, a former quarry he shares with two other estates.
Minimalist, hands-on winemaking. Hand-harvested grapes, partial destemming before fermentation, indigenous yeasts drive maceration and fermentation. Aging in tanks for a pure expression of the fruit, minimal sulfite use to preserve the wine's integrity.
