Grape variety: 100% Chardonnay from the Premier Cru La Forest parcel, located on the left bank of Chablis.
Terroir: Classic Kimmeridgian clay-limestone soils, rich in marine fossils. South-east exposure offers excellent ripeness while preserving freshness. Vines are cultivated according to organic and biodynamic principles, without official certification.
Vinification: Fermentation in stainless steel tanks and old oak barrels, with minimal bâtonnage. Long ageing on fine lees. Bottled without heavy filtration to preserve the purest expression of the terroir.
Tasting notes: Pale straw yellow colour. Complex nose with lemon zest, white pear, oyster shell, white flowers, and a touch of honey and iodine. On the palate, the wine is vibrant and taut, with precise acidity, chalky mineral depth, and a long, saline finish.
🍷 Serving temperature: 11–12°C. May benefit from light decanting in its youth. Best enjoyed from 2027, with outstanding ageing potential through 2035 and beyond.
An iconic Chablis estate, Domaine Dauvissat is today regarded as one of the greatest producers of white Burgundy. The domaine has been family-run for three generations. René, Vincent’s father, and before him his grandfather Robert, already worked their own vines and bottled their wines. Vincent has headed the domaine under his own name since 1989. Today, his daughter Étiennette works alongside him.
The domaine’s 12 hectares of vineyards span all four local appellations: Petit Chablis, Chablis, Chablis Premier Cru (6 ha), and Grand Cru (2.7 ha). The vines have been farmed biodynamically since 2002, though the domaine does not claim certification. Winemaking is minimalist, with very low sulphur use. The wines have exceptional ageing capacity; each climat gradually softens and reveals the full complexity of its terroir.
