Hello Curious, Playful, Amateurs, and Fine Food Lovers!

It's already February! We're writing to you with our beautiful snow-capped Pyrenees as a backdrop... In magnificent and freezing weather, Jurançon winemakers are pruning the 2022 Mansengs! And on our side, after a failed "dry January" (which we only half believe for you too in this community of joyful gourmets!), we're making way for other occasions to clink glasses (!): it's Crêpe Party month with ciders from "Cidrerons", Valentine's Day accompanied by Winemaker Champagnes 💕! Let's clink glasses on any occasion, in good company, by the fire, safe and sound!

New arrivals

A fresh wind from Alsace has swept into the cellar, notably with two vineyards that Florent and Thomas recently had the pleasure of visiting! The Domaine Kleinknecht in Mittelbergheim in Bas-Rhin (67) and the Domaine Hebinger in Eguisheim in Haut-Rhin (68). Both work according to biodynamic principles and are Demeter certified. The wines are produced with respect for life and vinified as naturally as possible. Discover great sparkling wines (ancestral or traditional, blends, a macerated white wine, and beautiful, highly complex and age-worthy Rieslings ☺️

Some new arrivals from Vincent Dauvissat have popped up... Shhh... His Chablis is only available in very limited quantities... 🤫

The Mas des Chimères is back in the cellar! This domain, which we've loved since the beginning, always shows extreme consistency in quality... Located in the Terrasses du Larzac, Guilhem likes to present himself as a peasant winemaker. From the start, he has worked organically with respect for life and always seeks the best expression of his complex terroirs. You simply must (re)taste his small Oeillade cuvée, juicy and delicious, his blended white wine with beautiful freshness, and his two intense and complex single-plot cuvées, Nuit Grave and Caminarem.

A novelty on the schist terroirs very close to Faugères in Vailhan, the Domaine Grain d'L run by Gaëlle Steunou, a passionate winemaker. This domain, established in 2016, has only 1.5 ha of old vines, and Gaëlle vinifies micro-cuvées including a Carignan Blanc (so rare), a Carignan Rouge, and Grenache Noir. These are natural and authentic wines!

And then, wonderful reunions in the Loire! The beautiful estate of Porte Saint-Jean is back with new vintages. Sylvain Dittière, who has distinguished himself in fine estates (including Clos Rougeard), works 6 hectares of old vines. Long infusions, fine tannins and fruit brilliance are the keywords. His wines, from different plots, can mature in the cellar... And it's also the return of some natural and super juicy cuvées from Guillaume Noire... Located in Rablay/Layon in Anjou, he works in a peasant manner and ferments naturally, with very, very small, or even non-existent, doses of sulfites!

Finally, let's take a little tour of our region, in the South-West, to discover something new! It's in the Gers, more precisely, that Sébastien Fezas is taking over the family estate of Jean Daugé! He works naturally and produces delicious juices. His cuvées are original, gourmet and warm, a real delight😊.

URATZI - A First!

Matthieu Rivera (on the right) from the Sugaar distillery in the Basque Country, close to Biarritz and Bayonne, has finally unveiled his first Single Malt! A long-term project requiring patience, as it takes time between establishing a distillery, the first distillation, and its maturation. But as they say in English, "All good things come to those who wait." We have already seen its evolution as we had the opportunity to taste it from maturation until now, after almost 3 years in bourbon barrels, and it is very refined.

Notes of honey, golden cereals, full-bodied and round palate, gourmet, finishing with pear, exciting and saline! Bottled at 47°, unfiltered and uncolored. Start your vertical now! A series of 300 bottles.
