From the “Les Pouches” parcel, planted on calcareous marl soils, with vines around 40 years old. Aged for 18 months in demi-muids, 60% of which are new barrels.

After acquiring highly formative experience alongside renowned winegrowers such as Tempé‑Alsace, Gauby‑Roussillon, Yvonne‑Anjou, and Clos Rougeard, Sylvain Dittière chose to settle in Anjou, at Montreuil‑Bellay, in 2010 with Pauline Foucault. He proudly manages 6 hectares of old vines, primarily planted with Chenin and Cabernet‑Franc, with a few plots of Sauvignon. His philosophy, resolutely centered on respecting life, is reflected both in the care given to the vines and in the winery. His vineyards, attentively nurtured, benefit from long and delicately infused macerations that allow for the full extraction of the finesse of the tannins and the brightness of the fruit. Whether white or red, his wines are aged with patience – up to 24 months – giving them the time they need to settle and fully blossom. Moreover, he is fortunate enough to age them in his incredible cellar, excavated into the rock with a constant year round temperature of approximately 12°C and an exceptional humidity.
