Do you know Pau? The birthplace of Henry IV, almost always on the Tour de France, the Grand Prix, the beret, Poule au Pot, the first golf course in continental Europe, Bernadotte, King of Sweden and Norway, the Boulevard des Pyrénées, the Pau racecourse, the Section Paloise Rugby team, kayaking, the famous Russian Cake...?
It is also the Jurançon appellation. The Jurançon vineyard in AOC (Appellation d'Origine Contrôlée) covers nearly 1,200 hectares and has been classified AOC since 1936, making it one of the first in France. Its wines were already made famous when Henry IV was baptised!
Our region is rich in Farmers and artisans who are ambassadors of gastronomy: cheeses, charcuterie, pastries... Jambon de Bayonne, sheep's cheese, duck, trout, black pork, Basque cake, Russian cake...
At the Cave du Palais, we offer unique tasting evenings where all the appetisers and meals are prepared by us, using locally sourced products, bought directly from the producer. Our chef friends follow the same approach.

Restaurant Paute - Maxime Laplace et Nicolas Moreau
"Partners in crime", Maxime Laplace and Nicolas Moreau have worked together (Les Crayères in Reims, La Mère Brazier in Lyon, Maison Boulud in Montreal) before teaming up in Pau. What’s at stake? A bistro just for them, where they serve market-inspired dishes with flair, just a stone's throw from the old Hédas washhouse, in a narrow, stairway-like alley. That midday, in the stone-brick-lime-washed room where Louise Arruat keeps a watchful eye: a more-than-perfect market organic egg, camouflaged by a chamomile siphon, flowing over pickled potato slices, fresh herbs (tarragon, chives, parsley), and golden-browned croutons; melting veal breast from the Larriou farm, cooked at low temperature and then seared, hugged by a Madeira cream and covered in hazelnuts, playfully paired with mashed potatoes and confit garlic; and finally, a deliciously simple finishing touch, a comforting vanilla and caramelized rice pudding, topped with a crumble and hazelnut butter ice cream. // Gérard Roubeix" – Le Fooding Review.
L'Etable d'Ossau - Kristian Poppe et Juan Matias Ferreyra
A Belgian-Argentinian duo recently settled in Béarn, and they chose this magical location facing Jean-Pierre (the Pic du Midi d'Ossau), just 30 minutes from the center of Pau. Their cuisine is inspired by their travels and offers a culinary journey, prepared with local products from nearby producers. And if you like playing the piano... there’s one! Reservation required.

What Else to do in Pau
The "Mélies" Cinema- In the new building in the Foirail, which houses both the cinema and the concert and performance hall, you'll find the Mélies Cinema. This is where we can watch all films in their original version (VO). There's also the small wine bar run by Jive and his team, who champion local products and introduce wines off the beaten track.
