Single-plot cider: Clay-limestone soil, south/south-east facing slopes

Varieties: Fréquin Rouge, Bisquet, Saint Martin, Rambeau

Winemaking: Fermentation with indigenous yeasts and natural secondary fermentation in the bottle using the ancestral method.

Tasting notes: Fine bubbles, a supple cider with a distinct bitterness. Pairs well with oysters, sauerkraut, and veal sweetbreads.

Domaine Antoine Marois is located in the heart of the Pays d'Auge, in Normandy. The estate covers 18 ha of natural meadows, including 7.5 ha of traditional standard-tree orchards. This cultivation method, along with the use of local varieties, allows for the production of apples without any treatment products. Fréquin Rouge, Mettais, Saint Aubin, Binet Rouge, Domaine, Rambeau are some of the many varieties that constitute a remarkable living heritage and a raw material of great richness.

Antoine, an agronomist by training, traveled all over France to meet winemakers. It is no coincidence that, attached to his roots, he returned to Normandy with the idea of producing fine ciders, like wines, carefully crafted and attentive to his terroir.

Residual sugar levels in ciders/perries: extra brut (less than 15g/liter), brut (less than 28g/L), demi-sec (28 to 42g/L) and doux (more than 42g/L).
