BORDATTO Cider Basa Jaun 2024 75cl Basque Country

€1100 EUR

Basa Jaun (wild man) cider, with aromas of dried fruit and subtle hints of apple and pear. This is a delightful and generous "pet nat"! A slightly bitter finish complements a good length and ensures it's very refreshing. It pairs well with cured meats (chorizo, young ham) as an aperitif, or with a few hazelnuts, walnuts, or chestnuts, and will quench your thirst on a hot afternoon.

A blend of 15 local apple varieties selected according to their ripeness. (Ondo Motxa, Eri Sagarra, Anisa, Gordin Xuri, Minxuri, Azau sagarra, Eztirotxia, Geza Xuria, Mandoburua, Patzulua)

Cider-making: Direct pressing, varieties separated. Debourbage followed by fermentation in stainless steel tanks (approx. 4 months), exclusively with indigenous yeasts. Aged on lees. Natural secondary fermentation in the bottle for two months (end of fermentation in bottles without added sugar liqueur or yeasts).

Tasting: Fruit, finesse, tension, elegant tannins, light refreshing bitterness.
Pairs well with meats, cheeses, and charcuterie.

Serve well chilled (approx. 7°C), store the bottle upright away from light at a temperature not exceeding 16°C. Cellaring potential: 5 to 10 years. All their ciders are vintage.

Domaine Bordatto is a charming, family-owned estate situated in Jaxu, close to Saint-Jean-Pied-de-Port in the Pays Basque region of France. Founded in 2001 by Pascale and Bixintxo Aphaule, the estate covers 4.5 hectares, with 3.5 hectares dedicated to apple orchards and 1 hectare to vineyards. The estate operates under organic principles, focusing on sustainable and respectful cultivation of the land.

The vineyards are planted with classic Basque grape varieties, such as Tannat, Marselan, and Cabernet Franc for the wine and in the apple orchards, they cultivate old local varieties such as Anisa, Eztika, and Erri Sagarra, which are well-suited for organic farming and contribute to the distinctive character of their products.
