Cider-making process: Direct pressing, separate varieties. Debourbage then fermentation in stainless steel tanks (approximately 4 months), indigenous yeasts only. Aging on lees. Natural secondary fermentation in the bottle for two months (end of fermentation in bottles without added sugar liquor or yeasts).

Domaine Bordatto is a charming, family-owned estate situated in Jaxu, close to Saint-Jean-Pied-de-Port in the Pays Basque region of France. Founded in 2001 by Pascale and Bixintxo Aphaule, the estate covers 4.5 hectares, with 3.5 hectares dedicated to apple orchards and 1 hectare to vineyards. The estate operates under organic principles, focusing on sustainable and respectful cultivation of the land.

The vineyards are planted with classic Basque grape varieties, such as Tannat, Marselan, and Cabernet Franc for the wine and in the apple orchards, they cultivate old local varieties such as Anisa, Eztika, and Erri Sagarra, which are well-suited for organic farming and contribute to the distinctive character of their products.
