Grape variety: Fer Servadou (also known as Mansois)

This cuvée changes with each vintage. The 2022 blend comes from two distinct parcels of Fer Servadou:
– 50% from steep south-facing terraces of red sandstone with very shallow soil
– 50% from steep clay-limestone terraces located at 480 to 500 metres altitude.

The maceration was longer than usual at the wine estate, with a sulphur-free vinification, followed by 12 months of ageing in demi-muids (600L barrels). A minimal addition of sulphites (2 g/hL) was made before bottling. The wine is unfined and unfiltered.

Tasting notes: The nose is initially discreet, gradually opening up to notes of black fruit and fresh herbal character. With air, it becomes deeper and purer. The palate is relatively light, driven by a fine, elegant tannic structure. The oak ageing is perfectly integrated, highlighting the varietal’s natural mentholated notes. The finish is long, broad, and mineral. This wine has clear ageing potential.

Marc Fraysse is a young winemaker who has taken over the two hectares of vines originally planted by his great-grandfather. After travelling as far as Australia, he has now settled back in his native Aveyron, where he cultivates his estate using biodynamic practices. No additives are used in his beautifully crafted wines, including this superb Marcillac, made exclusively from Mansois (also known as Fer Servadou).
