Grape varieties: 60% Petit Manseng & 40% Petit Courbu
Terroir: Sandstone and limestone. Rocky, poor soils with good drainage, in which the vine thrives.
Vinification / Ageing: Very low yields, averaging 15 hl/ha. Skin maceration followed by alcoholic and malolactic fermentation in stainless-steel tanks. Ageing on lees for 12 months in tank and in 700-litre demi-muids.
🍷 Serving temperature: 12°C, ageing potential of 10 years or more.
Domaine Ilarria, in the AOC Irouléguy appellation, is located in the valleys of Saint-Jean-Pied-de-Port and Baigorry. Established for several generations on 10 hectares of vineyards, the estate is among the organic pioneers of the appellation. Peio was born in the family home and feels deeply connected to his land. He enjoys observing and spending time in his vineyards, cultivating his grapes with patience and care. For him, everything is complementary and balanced. Always striving to work in harmony with nature, he draws inspiration from the principles of Japanese farmer and microbiologist Masanobu Fukuoka. The wines are crafted as naturally as possible, following this philosophy through to the very end.
