Winemaking / Aging : It is impossible to systematically produce an appellation wine, which must respect rigorous specifications, without any inputs. This cuvée is therefore no longer called Côtes du Rhône. The domain's sole aim is to offer a free wine with a "traditional" character of red wines from the southern Rhône valley. The cuvée is therefore now called "Costo dou rose" which is the Provençal translation of Côtes du Rhône (often used by Frederic Mistral in his poems). Aged for 9 months in barrels without topping up. No filtration or fining.
Tasting : Spicy red wine, but light and fresh with a lot of charm. Semi-carbonic maceration of Syrah, Grenache and Carignan for 2 weeks.
🍷 Serving temperature 14-15°, slight fizz on opening
The Domaine des Frères Soulier is made up of 20 hectares of contiguous land in Saint Hilaire d'Ozilhan, a stone's throw from the Pont du Gard, on a north-facing terroir derived from the same type of white limestone. The objective is to create an autonomous place with a very high diversity, without neighbors and minimum travel. 11 hectares of vines, 2 hectares of olive trees, 2 hectares of garrigue and 5 hectares of meadows for their animals.
